Protocol Version Negotiation #363

Currently, everything is just using public static final String LATEST_PROTOCOL_VERSION = "2024-11-05"; from McpSchema, and there is no protocol version negotiation during initialization.

We need to integrate the negotiation outlined in the spec: https://modelcontextprotocol.io/specification/2025-06-18/basic/lifecycle#version-negotiation
