[CHORE] replace cosmossdk.io/log with internal or libp2p impl #2395

Problem to solve

We are using cosmossdk.io/log for our logging system, while this is fine it would be nice to move off of all cosmos sdk dependencies in rollkit as the future of them is unknown.

Proposed solution or feature

either we can use libp2p logger interface to match what node is using or we can create our own interface.
