Tests: no end-to-end jar-name tests for release and RC versions #7

tests/test_extract_version.py checks maven_to_pep440 on release, RC and .postN strings. Only a -SNAPSHOT jar name is tested end to end, from file name through extract_version() to the result.

Proposed fix: add jar-name cases such as arcadedb-engine-26.10.2.jar → 26.10.2 and arcadedb-engine-26.11.1-RC1.jar → 26.11.1rc1, both for extract_version() and for the CLI with --format=pep440 and --format=docker.

Found in the final review of the move from ArcadeData/arcadedb (#1).
