🐛 Variant texutre swap uses item_model #528

🗣️ Describe the bug

With the target mine craft version set to 1.21.1 and using the texture swap feature of variants AJ will export a data pack that attempts to swap the textures by changing the item_model component which inst a component present in this version

🔄️ How to Reproduce

Set target version to 1.21.1
Create Texture A and texture B
Create a variant that swaps texture A for texture B
Export the pack
Change the variant command will return a success however the texture will not change and there will be an error in the logs

✅ Expected Behavior

On versions below 1.21.2 the item_model component should not be used
